What happens if the agent dies in the middle of a flow? Will the flow continue when a new agent comes online or will the flow error out?

Once the flow has begun running, the agent is not involved in any way so things will continue as expected; the agent’s only job is to create the job for the flow run and make sure it’s healthy

So it should be safe to run the agent (in hybrid mode) in a spot instance? Any reason other than potential delays this would cause a problem?

yup that sounds like a great idea to me! As you mention, delays could occur if the instance gets taken down but other than that you should be good to go
