What else can I do with a task that I can't do with a flow ?

... or vice versa? More generally, are there really any essential differences between tasks & flows? I'm yet to be convinced...

Not too many. Flow caching isn’t a thing. Task runners for async convenience operate on tasks. Those are the big ones. Tasks will be getting some new features shortly that allow them to work well in small background processes.
